Rather than relying on the familiar stereotypes of Italian cuisine, our menu celebrates the finest ingredients we can source from native-breed, carefully matured meats supplied by Aurox, to the freshest sustainably sourced seafood from Wright Brothers, alongside outstanding seasonal produce from Caterite.
Much of our cooking is centred around fire, using our open-flame barbecue to unlock the natural character of every ingredient, adding depth, smoke and flavour while staying true to the simplicity at the heart of Italian cooking.
